Raw honey is best kept in a cabinet or on the counter at room temperatures and will last forever. Natural crystalization can occur over time and settle in the bottom of containers. This is easily remedied by gently heating between 95 and 110 degrees in a water bath or double broiler type method, for a few minutes and gently stirring as it returns to its pure honey goodness!
